Very interesting read. I wonder if there’s any data showing diversified plant diet or fermented foods could potentially offset some of the deleterious effects from emulsifiers on the mucosal lining. Do you know if these researchers or any others have looked at this?
Found this review, it's UPF-focused rather than emulsifier-specific, but it does directly note that fiber, fermented foods, and probiotics can help offset the gut barrier damage UPFs cause. Not a study isolating emulsifiers alone, but it's the closest direct research I've found for that (PubMed Link: 11901572). I appreciate you reading!
Again, fascinating! And I always knew this was true! Emulsifiers give me migraine. I've had migraine for over 30 years. I've done the experimenting and I know it's true. It's bad juju that stuff. I'm so glad we have double-blind controlled trials to prove this stuff. I don't think people in the 1800's suffered this way. Their food was real food - dinner (green beans, potato and a pork chop) - now maybe that's not the the healthiest, but it was real and didn't have any emulsifiers!
